Chocky Cake (never fail)
What? Another chocolate cake?…everyone has a recipe. There are oodles of them. I was given this recipe 30 years ago by Penny, a neighbour in Nelson, NZ. Penny gave me a piece of this cake and I knew my family would love it. The only advice needed is that it is a runny batter, but it works perfectly. This has been made into many a birthday cake, and each time I made it for lunchboxes or a weekend treat, the icing would sometimes run off as the cake wasn’t completely cooled! Such was my family’s eagerness to eat it! This is easy-peasy, put all ingredients in a bowl, mix and pour the batter into a greased cake tin.
Simple! I doubled this recipe, the single batch was never enough, and it didn’t last long enough.
1 1/2 cups of plain flour
1 cup white sugar
1/2 teaspoon salt
1/2 teaspoon baking soda (bicarb of soda)
2 Tablespoons cocoa powder
1 Teaspoon baking powder
1 Tablespoon malt vinegar
1 teaspoon vanilla essence
5 Tablespoons melted butter
1 cup tepid water.
Now…Mix all together, and bake for 30-40 minutes at 180 degrees C.

Love the photo of you and your daughter enjoying the cake! This looks like a yummy recipe, the only issue is it’s in cups, the Brits use pounds and ounces, or grams and Kilograms! I’ll have to play at conversions I reckon because I love chocolate cake!
