Delicate Lemon Cake
1 cup of sugar
2 eggs
1 cup milk
125 grams margarine
1 & 1/2 cups self-raising flour
Grated lemon rind (or essence)
Sift flour, and combine with sugar and lemon. Add melted margarine, eggs, and milk. Beat well. Bake for 30 minutes in a moderate oven. 7″ (18cm) square tin.
