With Halloween getting closer, here’s a tasty different way to use a pumpkin!

Pumpkin Fruit Cake
125 g margarine
500g Sultanas or mixed fruit
1 cup sugar
1 cup cold mashed pumpkin
2 eggs
2 cups Self Raising Flour
Vanilla
Method: Cream butter and sugar, add egg and beat well. Add pumpkin, fruit, flour, vanilla, and a little milk for necessary). Bake in a moderate (350 F/180C) oven for 1 & 1/4 hours.
This seems a little like a carrot cake but with pumpkin instead, something that will be great fun to try.
