Pensitivity’s Three Things Challenge — Hand – Sincere – Crazy
This one is from my days of office work when I worked with a crazy bunch of people who all worked hard all week then come Friday, it was the world-famous Farmside Friday Shout. Someone bought along this Rocky Road Slice, and needless to say, there were no leftovers. I have to hand it to the team back then, we really put on a fabulous spread. They were sincere in delivering deliciousness every Friday. We would loiter around the table as we decided what to load on our plates. The work was secondary to the Friday shout! The recipe was shared around the office as we all liked it so much. The subject of the email it was in, was ‘Recipe for future shouts – haha – please replace the glazed cherries with gummy snakes.‘
Rocky Road Slice
1 250g packet of Guide Biscuits (plain biscuits)
1/2 cup chopped walnuts
1.5 Tbsp cocoa
1 25g packet marshmallows cut in quarters
1/2 cup caster sugar
1/2 cup slivered almonds, toasted
125 g butter
1 cup glace cherries, cut into halves
1 cup coconut
250 g chocolate chips
1 egg, beaten.
Method…..Combine the crushed biscuits, cocoa, and sugar in a large bowl. Cut in the butter with a pastry blender until the mixture resembles coarse breadcrumbs. Min with the beaten egg. Stir in the coconut and chopped walnuts. Spread into a sponge roll tin that has been lined with baking paper. Bake at 180 degrees for 20 minutes, until the top is lightly browned. Remove from oven, and immediately top with marshmallows, toasted almonds, halved cherries, and chocolate chips. Return to oven for 2 minutes to soften the chocolate. Swirl chocolate over marshmallows, cherries, and almonds. Cool until the chocolate sets. Cut into bars or squares. Makes 36-40 pieces.
I do love some rocky road! how fun to add snakes instead of cherries too!
